Salty crackers are topped with a buttery toffee layer, then covered in melted chocolate and sprinkles for the perfect sweet and salty sweet treat.

I usually make my saltine toffee with semi-sweet chocolate chips on top, but this time I decided to go for white chocolate instead. I was surprised by how well it paired with the toffee flavor and everyone in my family loved it.
This leprechaun crack is so delicious you won’t be able to stop at just one piece!

Ingredients needed
You can find the full recipe with instructions at the bottom of this post, but here is what you will need to make it.
- Butter: unsalted.
- Brown Sugar
- White chocolate chips: good quality chocolate chips.
- Saltine crackers: this recipe will also work with ritz crackers pretzels, or graham crackers.
- Sprinkles: have fun with it! Use a variety of green or gold sprinkles for this St. Patrick’s day themed dessert.

How to make leprechaun crack
Step 1: Line a baking sheet with parchment paper and line up the saltine crackers in rows. You will need 35 saltine crackers.

Step 2: Melt the butter and brown sugar in a sauce pan over medium low heat and slowly bring the mixture to a boil. Boil the mixture for 2–3 minutes, stirring constantly, until thick.
Recipe Tip
Be sure that you bring the butter and brown sugar to a boil very slowly. A common mishap that can happen when making toffee is for the ingredients to get hot too quickly and separate instead of forming a thick texture.


Step 3: Pour the thickened toffee over the saltines and spread it out evenly using a rubber spatula.


Step 4: Bake the toffee covered saltines at 350 degrees for 4–5 minutes, until browned and bubbly on top.


Step 5: After the toffee crackers are done baking, remove the pan from the oven and sprinkle the white chocolate chips over the top.


Step 6: After the chocolate sits for 5 minutes and is mostly melted, use the back of a spoon or rubber spatula to spread it evenly across the crackers. Top the melted chocolate with St. Patrick’s Day themed sprinkles.


Step 7: Place the leprechaun crack in the fridge or freezer until set, then break it into pieces using your hands or a knife.

Recipe Variations
Crackers: Change it up and use ritz crackers, club crackers, pretzels, or graham crackers in place of the saltines.
Sprinkles: Swap out the sprinkles for green and gold m&m’s.
Add lucky charms marshmallows: for another fun topping option!

Storing
Leftover leprechaun crack can be stored in an airtight container in the refrigerator or freezer. It will keep 1-2 weeks in the refrigerator or up to 2 months in the freezer.

My kids absolutely loved helping me make this recipe. It’s a great dessert that little hands can help decorate!
