This Greek yogurt banana bread will be your new favorite recipe to make your family!

Baking with Greek yogurt has become one of my favorite things.

I’ll link a few more of my favorite ways to use it, but lately I have been all about baking Greek yogurt into breads and muffins!

Not only does it add a little hidden nutrition, but it gives the most delicious light airy texture to baked goods.

My kids absolutely loved this Greek yogurt banana bread and it was gone in less than a day!

Ingredients and Notes

The full recipe with instructions is located at the bottom of this post, but here are the ingredients you will need to make this banana bread.

  • Greek yogurt: you will need plain whole milk unsweetened Greek yogurt for this recipe. This gives the banana bread a delicious light texture and adds a bit of protein too!
  • Bananas: The riper the better! Make sure to mash the bananas separately very well before adding them to the batter.
  • Butter: You will need unsalted butter for this recipe.
  • Eggs
  • Vanilla extract
  • Salt
  • Baking soda
  • Brown sugar
  • All-purpose flour

How to make greek yogurt banana bread

Step 1: Whisk the dry ingredients together in a mixing bowl, then set aside.

Step 2: Mash the banana very well until no big chunks remain.

Recipe Tip

I suggest mashing your bananas first before adding them to the wet ingredients. This ensures that you get all of the chunks out which results in a smoother finished flavor and texture in the banana bread.

Step 3: In a separate bowl, whisk together the wet ingredients: Greek yogurt, mashed banana, melted butter, eggs, vanilla extract, and brown sugar.

Step 4: Add the dry ingredients to the wet ingredients and mix them together until just combined. Do not over mix the batter.

Step 5: Pour the batter into a greased loaf pan. Bake the banana bread at 350 degrees F for 45-55 minutes, until a toothpick inserted comes out clean. 

I loved that this banana bread was light and such a perfect texture.

The best part though? Many banana bread recipes are too sweet. This one is the perfect blend of sweetness without being overwhelmingly so.

This Greek yogurt banana bread makes a great breakfast or on the go snack. It never lasts long in our house!

Storing

Leftover banana bread can be stored in an airtight container in the refrigerator for 3-4 days.

Greek Yogurt Banana Bread

Light and delicious recipe for banana bread made with Greek yogurt.
Prep: 10 minutes

Ingredients 

  • ½ cup plain whole milk Greek yogurt
  • 1 cup mashed ripe bananas, around 3 bananas
  • ¼ cup unsalted butter, melted and slightly cooled
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup brown sugar
  • 1 ¾ cups all-purpose flour

Instructions 

  • Whisk together the salt, baking soda, and all-purpose flour.
  • In a separate bowl, whisk together the Greek yogurt, mashed banana, melted butter, eggs, vanilla extract, and brown sugar.
  • Add the dry ingredients to the wet and mix until just combined using a rubber spatula.
  • Pour the batter into a greased loaf pan, and smooth out the top.
  • Bake the banana bread at 350 degrees for 45-55 minutes, until a toothpick inserted comes out clean.
  • Allow the banana bread to cool for 10 minutes in the pan, then remove it onto a wire cooling rack to cool completely.
