These Mint Chocolate Energy Bites Are Delicious!

You guys know that I love all things energy balls.

I am working on a whole cook book about energy balls right now and I am so excited for it to come out!

These mint chocolate ones are my latest creation and they are SO GOOD.

My kids love chocolate mint flavored protein bars, so I knew that I wanted to create something similar to that, but with a much shorter ingredients list!

If there’s one thing I am good at, it is making delicious energy bites that taste like dessert.

No chalky protein powder flavor here, these are rich and chocolatey and have the best minty flavor. My kids loved them and I can’t stop eating them!

You can find the full recipe and instructions at the bottom of this post, but here’s what you need to make them.

Ingredients & Notes

  • Almond Butter: You need natural (drippy) almond butter. Mine did not have added salt or sugar.
  • Salt: If your almond butter is salted, omit this and salt to taste at the end.
  • Chocolate Protein Powder
  • Cocoa Powder: to really amp up the chocolate flavor!
  • Pure Maple Syrup: or substitute honey
  • Quick Oats: I love the chewy texture these give!
  • Rice Krispies Cereal: our secret for a little added crunch!
  • Peppermint Extract: to add the mint flavor
  • Mini Chocolate Chips: for chocolate crunch in every bite

How To Make Mint Chocolate Energy Bites

Step 1: Add all of the ingredients to a mixing bowl and mix to combine using a rubber spatula. I find this the easiest tool to use to mix the batter since it will be sticky and thick.

Recipe Tip

My almond butter was not salted, so I added additional salt to the recipe. If your almond butter has salt in it I would suggest leaving any added salt out until the end. Take a taste test and maybe add 1/4 teaspoon – 1/2 teaspoon of salt instead!

Step 2: Line a baking sheet with wax paper and use a cookie scoop to drop balls of batter onto it.

There are a lot of cookie scoop sizes out there, but I typically make my energy bites with a 1.5 Tablespoon sized scoop.

Step 3: Roll each ball with your hands to smooth it into a circular shape. Refrigerate the energy bites until firm.

How To Store

Store leftover mint chocolate bites in an airtight container in the refrigerator for up to 5 days, or in the freezer for 2-3 months.

Mint Chocolate Energy Bites

Thin mint lovers will go crazy for these mint chocolate energy bites!

Ingredients 

  • 1 cup creamy drippy almond butter, no salt added (see notes)
  • 1 ¼ teaspoons salt
  • ½ cup chocolate protein powder
  • 1 tablespoon unsweetened cocoa powder
  • ½ cup pure maple syrup
  • ½ cup quick oats
  • ½ cup rice krispies cereal
  • 2 teaspoons peppermint extract
  • ½ cup mini chocolate chips

Instructions 

  • Mix together all of the ingredients in a mixing bowl using a rubber spatula until thoroughly combined
  • Use a 1.5 tablespoon size cookie scoop to drop balls of batter onto a wax paper lined baking sheet
  • Roll each ball in your hands to smooth out the shape
  • Refrigerate or freeze until firm, then transfer to an airtight container for storing. These will keep 5 days in the fridge or 2-3 months in the freezer.

Notes

If your almond butter has added salt, leave out the salt from the recipe ingredients. After you stir together the batter, you can salt to taste. I would start with 1/4 teaspoon to 1/2 teaspoon.
