When I was a teenager, I started juicing for fun and got hooked. I would often make 30 ounces of juice to drink first thing in the morning as my coffee replacement (I felt amazing!)

Since having kids, I stopped juicing but last year I decided to pick it up again to see if it helped me be able to consume more veggies in this busy season of life.

Now I juice at least 2 to 3 times a week, more if I have the time. I love the way it makes me feel and how easy it is to increase my fruit and veggie intake far above what I would normally consume in a day.

Green juices are a favorite of mine and I have several recipes on my blog that I will add to the bottom of this post. This vegetable juice is packed full of veggies and naturally sweetened with green apple.

Vegetable Juice Ingredients

  • Cucumber: peeled and cut into long strips
  • Flat leaf parsley: washed
  • Kale: washed and stems removed
  • Green Apples: cored and cut into slices
  • Lemon: peeled and quartered
  • Celery: washed and cut
  • Ginger: peeled

How to make vegetable juice

Step one: Prepare all of your ingredients for juicing. Peel the cucumber. Wash and cut the celery. Remove the stems from the kale and wash it. Peel the ginger and lemon. Core the green apple and cut it into slices.

Step two: Run all of the ingredients through a juicer. Stir the juice and drink immediately, or store it for later in the refrigerator.

I love the feeling I get after drinking fresh green juice and it is always more veggies than I would normally consume in one sitting. I’m a veggie lover and juicing only adds to that and lets me get more nutrients all at once!

How to store

Leftover vegetable juice can be stored in a glass or jar with an airtight lid for 24 hours in the refrigerator. I keep 4 oz, 8 oz, and 16 oz glass jars with lids on hand for storing leftover juice. Fill it to the brim before putting the lid on for best freshness.

When you are ready to drink the juice, shake the jar well before opening as the juice will separate naturally.

Vegetable Juice

This easy vegetable juice recipe is made with cucumber, kale, celery, and parsley.
Servings: 4

Ingredients 

  • 1 large cucumber, peeled and cut into long strips
  • 1 small bunch flat leaf parsley, washed
  • 1 small bunch of kale, washed and stems removed
  • 2 green apples, washed, cored, and cut into slices
  • 1 lemon, peeled
  • 1 bunch of celery, washed and ends cut off
  • 1 inch piece of ginger, peeled

Instructions 

  • Prepare all of the ingredients as stated above by peeling, washing, and cutting them into the right size to fit into the juicer
  • Run all of the ingredients through a juicer
  • Consume immediately or store for 24-48 hours in an airtight jar with a lid in the refrigerator
