These cake mix cookie bars have fast become top of my easy dessert list. With just 4 ingredients and a few minutes you can make homemade cookie bars in a fraction of the time.

You can use any flavor of cake mix and add in different mix ins. There are so many flavor possibilities that you could make with this recipe as a base.

I have made them for birthday parties, Christmas, dinner gatherings, graduations, and more. Basically any time I am asked to bring a dessert!

Ingredients You’ll Need

  • yellow cake mix: or any flavor cake mix
  • eggs
  • oil: any neutral oil like olive oil or vegetable oil
  • chocolate chips

Step 1: Preheat your oven to 350 degrees. Beat the eggs in a small bowl. Add the cake mix and oil to the beaten eggs and mix well to combine.

Step 2: Beat in the chocolate chips (the batter will be very thick).

Step 3: Grease a 9 X 13 baking dish with cooking spray. Spread the cookie bar batter evenly in the dish (this will take several minutes to spread evenly).

Recipe Tip

Use wet or greased hands or a rubber spatula to spread the batter into the dish. The batter is very thick and this will make it a little easier to spread!

Step 4: Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until toothpick inserted comes out clean. Once cooled, cut the cookie bars into squares.

Serve warm with ice cream for an extra delicious treat!

The texture of these bars is the thickness of a brownie with the taste of a chocolate chip cookie. They’re just so fun to eat and really satisfying and thick and chocolatey.

Storing

Leftover cake mix bars can be stored in an airtight container at room temperature for 3-4 days, if they last that long!

These four ingredient cake mix cookie bars are a great easy dessert!

Ingredients 

  • 15 ounce box of yellow cake mix
  • 2 eggs, beaten
  • 1/3 cup olive oil, or vegetable oil
  • 12 oz chocolate chips

Instructions 

  • Preheat the oven to 350 degrees
  • Beat the eggs in a small bowl
  • Add the cake mix and olive oil to the beaten eggs and mix well
  • Beat in the chocolate chips (the batter will be very thick)
  • Grease a 9 X 13 baking dish (see notes for the thickness)
  • Spread the batter evenly in the dish (this will take several minutes to spread evenly as it is very thick and sticky)
  • Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until a toothpick inserted comes out clean
  • Once cooled, cover or store leftover bars in an airtight container

Notes

  1. The batter will be thick and hard to spread (this is normal) I found that using a rubber spatula and a spoon made it easier to spread into the pan. It may take a couple minutes, but it’s so worth it!
  2. The thickness of the cookie bars will depend on how large of a baking dish you use.

  1. Add brown sugar and butter instead of oil. Brown sugar makes the taste of a real chocolate chip cookie bar

  2. I made these and they really are very good and full off chocolate goodness! I did find that it was much easier spreading the thick mixture by using clean, buttered fingers.

  3. These are great this time I added coconut and walnuts. You can add an infinite variety of items. Dried fruit, almond paste swirled in. Bananas, peanut butter. Itโ€™s limitless.

  4. These are amazing! The first time I made them I didn’t have enough of regular chocolate chips so I used a combo of dark, semi-sweet and milk chocolate. They were so good I do that every time now. I warn people that the batter is more like bread dough than batter. That seems to help their mindset. Using a spatula coated with cooking spray helps. This is a fantastic recipe, thank you for sharing!

  6. I made this yesterday and I put a bit of a twist to them myself. I had a box of milk chocolate cake mix and paired that with Reese’s peanut butter chips. And had a white confetti cake mix and added mint chocolate chunks to that one. Both turned out great. This was super easy to make, so this will definitely be a go to baking recipe. Are a great addition to our lunchbox meals. I found that I sprayed my hands with some Pam and worked the batter into the pan was the easiest. Thank you for this recipe

  7. Just a helpful tip…when you are ready to spread the batter in your pan, wet your hands with cold water and push it down spreading it out as you go. You may have to repeat this more than once, but it works amazingly and is much faster than fighting with your spatula.

  8. I just made these and they are still warm out of the oven. I only had a chocolate cake mix, so used that. I didn’t have trouble spreading them into the pan as I added a little more of oil. I then put my hand inside of a qt. size storage bag to do the spreading. No trouble whatsoever. I added chopped walnuts to my half. My husband will love these because #1, he likes fluffy soft cookies and #2, they taste like a brownie. Next time I would use a larger pan so they aren’t as thick. I used a 9X13 as stated in teh recipe..I like a crispier “cookie”. Over all I have to say these are very good, and so easy to make.

  9. I had promised to make something for a neighbor, but wasn’t in the mood for something complicated so I thought I’d give this recipe a try. I patted the dough into the pan with my hands, then sprinkled the top with a cinnamon sugar mixture. She and her family raved about these cookies! Next time I’m going to try a strawberry or orange cake mix with white chocolate chips. ๐Ÿ™‚

  10. I just took these cookie bars out of the oven. Just had to have a little taste while they were hot. So good!! I used the applesauce instead of oil and only half a bag of chocolate chips since thatโ€™s all I had. It turned out delicious! I will be making again.
