Greek Yogurt Waffles

These Greek Yogurt Waffles are light and fluffy and so easy to make! Stock your freezer with these homemade waffles for busy mornings.
We love these Greek yogurt waffles!
My kids love store bought frozen waffles on busy mornings when we don’t have much time to make breakfast and they are in regular rotation in our house.
I got to thinking about my Greek yogurt chocolate chip muffins and how I wondered if I could tweak that recipe to make waffles with that same amazing fluffy texture.
I am happy to say I accomplished it! These waffles have the dreamiest fluffiness in every bite. They are also low in sugar and have 4 grams of protein each!
They freeze beautifully and were a hit with the whole family. I love stocking my freezer with these to have on hand for the week.
My kids love mini waffles, so I made these in a Dash mini waffle maker.
If you prefer full size waffles, you can do that too of course!
Ingredients and notes
Here are the ingredients you will need to make this recipe. You can find the full recipe with instructions at the bottom of this post.
- All-purpose flour: I have not tested this recipe with gluten free flour. If you have please leave a comment!
- Baking powder
- Granulated sugar: just a little bit to add sweetness, you don’t need much.
- Greek yogurt: you will need plain unsweetened Greek yogurt for this recipe.
- Whole milk
- Unsalted butter, melted and slightly cooled
- Eggs
- Vanilla extract
- Salt
How to make Greek yogurt waffles
Step 1: Add the flour, baking powder, and salt to a mixing bowl and whisk them together.
Step 2: In a separate bowl, whisk together the sugar, Greek yogurt, milk, melted butter, eggs, and vanilla extract.
Step 3: Add the dry ingredients to the wet and mix until just combined using a rubber spatula.
Step 4: Heat a dash mini waffle maker and spray it with olive oil.
Recipe Tip
Use a hand pump olive oil spray or brush the oil on instead of using and aerosol cooking spray. Aerosol sprays can cause issues with cleaning and the nonstick finish of the waffle iron.
Step 5: Add ¼ cup of the batter to the waffle maker and cook the waffle until done. Repeat for the remaining waffles. Re-spray the waffle iron as needed.
These waffles come together so quickly and I feel so much better about feeding them to my kids!

Storing
Leftover Greek yogurt waffles can be frozen in an airtight container for up to 3 months, or stored in the refrigerator for 4-5 days.
Whether it’s a Saturday morning breakfast, breakfast for dinner, or just a regular morning, these are always a family favorite!
It’s hard to describe the texture, but the Greek yogurt in this recipe gives the waffles this amazing light and airy fluffy texture that is unlike the waffles you would buy from the store.
