The easiest banana muffins!

Using a box of cake mix is one of our favorite hacks for making simple homemade treats in a fraction of the time. Banana muffins are a classic family favorite, and using a box of cake mix makes them even easier to prepare!

These delicious banana muffins are made with simple ingredients and come out so light and fluffy. They are truly the best no fuss muffins that even a beginner baker can make!

Ever since I made banana bread with cake mix, I knew I needed to create a banana muffin recipe too. They have the dreamiest fluffy texture from the cake mix and I love how little time they take to throw together!

Ingredients you will need

  • Cake mix: I used yellow, but vanilla or even chocolate cake mix would also be delicious!
  • Eggs:
  • Vanilla extract
  • Cinnamon
  • Bananas: the riper the better! Overripe bananas are best for this recipe.

How to make cake mix banana muffins

Step 1: Whisk together the vanilla extract, cinnamon, mashed banana, and melted butter.

Joy’s Tip

I have found the key to the perfect not mushy banana muffins is to measure exactly how much banana is used instead of just using 3 or 4 bananas. That is why I included an exact measurement for you in the recipe card.

Step 2: Add the eggs to the batter and whisk until combined.

Step 3: Add the box of yellow cake mix and stir it into the batter with a rubber spatula until just combined. Do not over mix.

Step 4: Line a muffin tin with liners and distribute the banana muffin batter evenly into 12 muffin cups.

Step 5: Bake the cake mix banana muffins at 350 degrees for 20-23 minutes, or until a toothpick inserted comes out clean.

Your kitchen will be smelling so delicious!

Allow the muffins to cool in the tin for 5 minutes, then gently remove them to cool on a wire cooling rack to cool completely.

How to store leftover muffins

Once completely cooled, transfer the muffins to an airtight bag or container and store in the fridge for 3-4 days, if they last that long!

These are so incredibly fluffy and moist and the perfect sweetness. If you love banana bread, these muffins are a must make! They are so simple to throw together and make your house smell like a bakery.

Eat them as is or spread with butter as we like to do. Everyone enjoyed these and they were gone in a day at our house!

Recipe substitutions

  • Mix ins: Add in 1 cup of chopped nuts for banana nut muffins, or 1 1/2 cups of semi-sweet chocolate chips to make chocolate chip banana muffins.
  • Cake Mix: substitute the yellow cake mix for vanilla, white, or chocolate cake mix.
  • Butter: Substitute the butter for a neutral oil or applesauce.

Cake Mix Banana Muffins

Ingredients 

  • 15 oz yellow cake mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 ⅓ cups mashed overripe bananas, around 3-4 bananas
  • 6 tablespoons melted butter

Instructions 

  • Whisk together the vanilla extract, cinnamon, mashed banana, and melted butter. Add the eggs and whisk again to combine.
  • Add the yellow cake mix and stir with a rubber spatula until just combined. Do not over mix the batter.
  • Distribute the muffin batter into 12 lined muffin cups.
  • Bake the banana muffins at 350 degrees for 20-23 minutes, or until a toothpick inserted comes out clean
  • Cool the muffins for 5 minutes in the pan, then transfer to a wire rack to cool completely.

    I made these today using a spice cake mix. I still added the vanilla (I used a vanilla bean paste I’m obsessed with) and threw in some chocolate chips. The smells from my oven were so heavenly my 2.5yr old kept asking when they’d be ready, and couldn’t handle waiting for them to cool completely.

    Definitely saving and using this recipe again!! Absolutely perfect for those too ripe bananas and about to expire cake mixes! 10/10!!

  2. Made these last night and they are so yummy! Tastes just like banana bread but without all the ingredients and hassle! Highly recommend!

    3/4 c raisins &
    3/4 c nuts, finely crushed.
    Absolutely delicious & so easy to make (I also used cup cake liners).

  4. Made these today and they are great! I added about a cup of light raisins and about a cup of chopped brazil nuts, so I had almost twice as many muffins. (I have a daughter named Joy.)

    1. I cannot recommend a substitution without trying it first. Almond flour typically is a much different texture in recipes.

    2. @marian, I used gluten free almond flour yellow mix but since it was only 12.2 oz of cake mix i had to use two smaller bananas and cut down the butter to 4 tablespoons. It came out a little on the very moist side so make sure middle is cooked. I tried a second time, this time I added 1/2 cup of crushed walnut and used ingredients as written in recipe and it came out perfect.
