These eggnog muffins are so soft and fluffy and glazed with a delicious eggnog icing.

Around the holidays I love to use eggnog in holiday inspired recipes like eggnog french toast and my favorite cranberry eggnog bread.

Baking with eggnog makes these muffins incredibly moist.

I love making these for holiday breakfasts or a sweet treat to enjoy with my coffee!

Ingredients needed

  • all purpose flour
  • sugar: I used cane sugar, but you can use regular sugar
  • powdered sugar: for making the glaze
  • eggnog
  • baking powder
  • vanilla extract
  • unsalted butter
  • cinnamon, nutmeg, and salt

How to make eggnog muffins

Step 1: Whisk together the all purpose flour, baking powder, cinnamon, nutmeg, and salt in a bowl.

Step 2: In a separate bowl, combine the sugar, eggs, eggnog, vanilla extract, and melted butter.

Step 3: Add the dry ingredients to the wet and stir until just combined with a rubber spatula.

Step 4: Line a muffin tin with parchment paper muffin liners.

Distribute the batter evenly into 12 muffin cups.

Step 5: Bake the eggnog muffins at 350 degrees for 17-22 minutes or until a toothpick inserted comes out clean.

Step 6: Let the muffins cool completely before glazing.

To make the eggnog glaze, combine the eggnog and powdered sugar until it forms a thick drippy icing.

Once the muffins have cooled, glaze the tops with the eggnog icing.

The icing really brings out the eggnog flavor of the muffins and is seriously delicious!

I first made these muffins about after my third son was born.

I just couldn’t stay out of the kitchen and wanted to make a fun holiday sweet to enjoy with my family.

Eggnog Muffins

Ingredients 

  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 eggs
  • 1 cup eggnog
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt

For the eggnog glaze

  • 2 tablespoons eggnog
  • 1 cup powdered sugar

Instructions 

  • Whisk together the flour, baking powder, cinnamon, nutmeg, and salt in a bowl
  • In a separate bowl, combine the sugar, eggs, eggnog, vanilla extract, and melted butter
  • Add the dry ingredients to the wet and stir until just combined
  • Line a muffin tin with parchment paper muffin liners
  • Distribute the batter evenly into 12 muffin cups 
  • Bake the eggnog muffins at 350 degrees for 17-22 minutes or until a toothpick inserted comes out clean
  • Once the muffins have cooled, make the glaze by combining the powdered sugar and eggnog 
  • Glaze the muffins with the eggnog glaze
