Peanut Butter Oatmeal Cookie Bars
These peanut butter oatmeal cookie bars are inspired by my wildly popular Flourless Cookies.
I have heard from so many readers who love the simplicity of that recipe, noting that it’s a more nutritious dessert that doesn’t require any fancy ingredients and tastes amazing.
These gluten free cookie bars are all things delicious! Not only are they yummy, but they are naturally gluten free, can be made dairy free, and have an added bonus of protein too!
In fact, the ingredients in these bars are so clean that I don’t feel bad letting my kids eat them for breakfast. Each bar has 9 grams of protein!
And Mom letting you have a cookie bar for breakfast? Who doesn’t love that!
Serve these cookie bars for breakfast, as a snack, or as dessert and you can’t go wrong. They never last long in our house!

Ingredients to make gluten free cookie bars
- Peanut butter: you will need natural creamy peanut butter for this recipe. The only ingredients should be peanuts and salt.
- Pure maple syrup: real maple syrup, not pancake syrup.
- Vanilla extract
- Rolled oats: oats are gluten free by nature, but be sure to buy specifically marked gluten free oats to avoid any cross contamination.
- Semi-sweet chocolate chips: use dairy free chocolate chips to make this recipe dairy free.
- Eggs
- Baking powder
- Salt

How to make healthy cookie bars
Step 1: Preheat your oven to 350 degrees. Beat together the peanut butter, maple syrup, eggs, and vanilla extract in a mixing bowl.


Step 2: Add the oats, baking powder, and salt and mix until combined.


Step 3: Fold the chocolate chips into the batter using a rubber spatula.
Recipe Tip
To make this recipe dairy free, just substitute dairy free chocolate chips.


Step 4: Grease a 9×13 dish with cooking spray or line it with parchment paper. Spread the cookie bar batter out evenly and press it down. Add additional chocolate chips to the top of the batter.


Step 5: Bake the cookie bars at 350 degrees for 25-30 minutes, or until a toothpick inserted comes out clean.


Step 6: Allow the bars to cool completely, then cut them into 16 pieces.

Storing
Leftover cookie bars can be stored in an airtight container in the refrigerator for 4-5 days.
