Ingredients You Will Need
- Cake Mix: one box of yellow cake mix.
- Canned Pumpkin: real pumpkin, not pumpkin pie filling.
- Pumpkin Pie Spice & Cinnamon
- Brown Sugar: for topping. This is optional, but adds a delicious crunchy top to the muffins!

How To Make Cake Mix Pumpkin Muffins
Step 1: Beat together the yellow cake mix, pumpkin, cinnamon, and pumpkin pie spice in a mixing bowl until combined.


Step 2: Line a muffin tin with parchment paper liners and distribute the batter into the 12 cups.


Step 3: Sprinkle the tops of the muffin batter with brown sugar. This step is optional, but adds a nice touch and a little added texture and crunch to the muffins.
Recipe Tip
I recommend using parchment paper muffin liners for this recipe. Nothing will stick to them and there is no need to spray them with cooking spray.
If you use regular muffin liners, be sure to spray them first before adding the batter in.


Step 4: Bake the pumpkin muffins at 350 degrees for 22-25 minutes, until a toothpick inserted comes out clean.

How to customize these pumpkin muffins
- Make gluten free pumpkin muffins: substitute a box of your favorite gluten free yellow cake mix.
- Make it more wholesome: use a box of more natural cake mix and top with coconut sugar.
- Add toppings: Substitute the brown sugar topping for mini chocolate chips, chopped up pecans or walnuts.

Can these pumpkin muffins be frozen?
If so, what is the best way to freeze them?
I would say they would keep well in an airtight bag or container in the freezer for 2-3 months!
These were so easy and so good!! Definitely saving this one!
I dipped the muffins in melted butter and then cinnamon sugar. Very good.
