Pumpkin cake mix muffins make a great fall treat that only take minutes to throw together. Cake mix recipes are a great way to make something homemade in a fraction of the time!

These cake mix muffins only need 5 minutes to prep, and are ready from start to finish in just half an hour. 

Admittedly, I was skeptical about these—it sounded too easy—but they turned out great! Super moist and pumpkiny, we took some to our neighbors and they loved them! I kind of feel like I cheated using such a simple recipe haha. Will be saving this as a pumpkin season staple! – River

Ingredients You’ll Need

  • Cake Mix: you need one box of yellow cake mix
  • Canned Pumpkin: not pumpkin pie filling
  • Pumpkin Pie Spice & Cinnamon
  • Brown Sugar: for topping (optional but adds a nice crunchy topping!)

How To Make Cake Mix Pumpkin Muffins

Step 1: Beat together a box of yellow cake mix, one can of pumpkin, the cinnamon, and pumpkin pie spice.

Step 2: Line a muffin tin with parchment paper liners and distribute the batter into the 12 cups.

Recipe Tip

We love using parchment paper muffin liners! NOTHING will stick to them and no need to spray!

If you use regular muffin liners, be sure to spray them first before adding the batter in.

Step 3: Sprinkle the tops of the muffin batter with brown sugar. This step is optional, but adds a nice touch!

Step 4: Bake the pumpkin muffins at 350 degrees for 22 – 25 minutes, until a toothpick inserted comes out clean. 

How to customize these pumpkin muffins

  • Make gluten free pumpkin muffins: simply substitute a box of your favorite gluten free yellow cake mix.
  • Make it more wholesome: use a box of more natural cake mix and top with coconut sugar. 
  • Add toppings: Substitute the brown sugar topping for mini chocolate chips, or chopped up pecans or walnuts.

How To Store

Store leftover cake mix muffins in an airtight container in the refrigerator for 3-4 days.

Cake Mix Pumpkin Muffins

These super easy fluffy pumpkin muffins are made with a box of cake mix!

Ingredients 

  • 15 oz box yellow cake mix
  • 15 oz canned pumpkin
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • Brown sugar, for topping (optional)

Instructions 

  • Beat together the yellow cake mix, pumpkin puree, pumpkin pie spice, and cinnamon until combined
  • Line a muffin tin with parchment paper liners (these will not stick to the muffins) or spray regular muffin liners with cooking spray
  • Distribute the batter evenly into the 12 muffin cups
  • Sprinkle the tops with brown sugar (optional)
  • Bake the muffins at 350 degrees for 22 – 25 minutes, until a toothpick inserted comes out clean

    What a great way to use a cake mix and pumpkin! Very tasty. I threw a few mini chocolate chips and walnuts on top along with the brown sugar. The only problem I had was that I did not have regular cupcake liners so I tried to use parchment paper. The batter is so thick and dense that it was real hard to get it divided up and into the cups. anyway, I just ate one and it was delicious. I look forward to sharing them with my family.

  3. And I’ve been making mine from scratch lol NEVER AGAIN! I love this recipe and you can “customize” any way you like! Made it exactly as the recipe and will add craisins next time. So good and thank you for sharing!

  5. I make these all the time but I use spice cake mis and omit the other spices, also sometimes add chopped nuts or raisins

    1. Just cake mix, plus the other ingredients in the recipe card. Not the ingredients listed on the back of the box.
