If you’re looking for a new way to serve veggies that actually tastes good, you need this recipe! Bite sized cauliflower florets are roasted until tender, then roasted with cheese on top to form a delicious cheesy crispy texture.
When it’s been awhile since my kids tried a bite of cauliflower, this is the recipe that I pull out. While I love a traditional roasted cauliflower recipe, this cheesy version is absolutely next level delicious.
There are few things that don’t taste delicious when topped with melted cheese and roasted to make delicious crispy cheesy edges!
This roasted cauliflower with cheese uses simple, basic ingredients that you probably already have on hand. It’s one of our favorite low carb side dishes. Try it as a dinner side dish this week!

Roasted Cauliflower Ingredients
- cauliflower: cut into bite sized florets
- olive oil: or substitute another neutral flavored cooking oil
- cheese: we like sharp cheddar for this recipe
- spices: salt, garlic powder, and onion powder
How to make cheesy roasted cauliflower
Preheat your oven to 400 degrees.
Step 1: Wash a head of cauliflower and cut the cauliflower into bite sized florets.
The size of the cauliflower florets is important here. If you cut them too large, they will take longer to cook and the texture will not be as good.
Aim for cutting similar in size small cauliflower florets.
Step 2: Place the cauliflower in a mixing bowl, and add the salt, garlic powder, onion powder, and olive oil.
Stir to combine the spices and oil until the cauliflower florets are evenly coated.
Step 3: Place the cauliflower florets onto a baking sheet and spread them out into an even layer to allow them to cook evenly. Roast the cauliflower at 400 degrees for 20 minutes.
Use a spatula to stir and flip the cauliflower, then roast it for 5 more minutes.
Step 4: Stir and flip the cauliflower again, then add the fresh grated sharp cheddar cheese. Return the pan to the oven and roast the cauliflower for another 5 minutes, or until the cheese is melted and beginning to crisp up.
The cauliflower should be tender and browned on the edges, and the cheese will melt and crisp to make a delicious cheesy crust on the cauliflower.
The ingredients might be simple, but the flavor is so good! This cheesy cauliflower is a great way to get you to eat more veggies.
How to store
Leftover cheesy cauliflower can be stored in an airtight container in the refrigerator for up to 3 days.
For the best texture, I would recommend heating leftover roasted cauliflower in the oven at 350 degrees on a baking sheet until hot.

Cheesy Roasted Cauliflower
Ingredients
- 1 head of cauliflower, cut into small similar sized florets
- ½ teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 tablespoons olive oil
- 1 cup sharp cheddar cheese, freshly grated
Instructions
- Preheat the oven to 400 degrees
- Cut the cauliflower into similar sized small florets (see the pictures in the post for size comparison)
- Place the cauliflower in a mixing bowl and toss add the salt, onion powder, garlic powder, and olive oil. Stir well to combine.
- Place the cauliflower florets onto a baking sheet and spread them out into an even layer.
- Roast the cauliflower at 400 degrees for 20 minutes
- Flip and stir the cauliflower with a spatula
- Return it to the oven and roast for 5 more minutes, until tender and browned on the edges
- Flip the cauliflower again, then sprinkle the fresh grated sharp cheddar cheese over the top
- Roast the cheesy cauliflower for 5 more minutes, or until the cheese is melted and crispy on the edges
