Roasted Frozen Corn

Frozen roasted vegetables are one of the best easy side dishes. This roasted frozen corn is baked to golden perfection with simple spices and parmesan cheese.
If you have frozen corn and a few simple pantry ingredients, you can make this delicious roasted frozen corn recipe!
Frozen roasted vegetables are one of my very favorite things.
I already have recipes for roasted frozen cauliflower, roasted frozen carrots, how to cook frozen green beans, roasted frozen brussel sprouts, and frozen roasted broccoli that we make all the time.
When time is tight, it’s so easy to just open up a bag of vegetables, and it’s ready for the oven in less than 5 minutes!
I often keep my freezer stocked with frozen vegetables for just this reason.
The added bonus for me is not having to worry about fresh produce going bad if I forget to use it in time.
Of course fresh produce is delicious, but sometimes you just need the convenience factor of frozen! I love using frozen corn for recipes like this slow cooker creamed corn too.
how to roast frozen corn
To cook perfect frozen corn, all you need is just a few simple ingredients! Olive oil, salt, pepper, and garlic powder for flavor.
Roasting at high heat is one of my favorite methods for cooking corn, as the texture is just so delicious.
Step 1: preheat the oven to 425 degrees.
Step 2: spray a baking sheet with olive oil spray.
Step 3: place the frozen corn kernels on the oiled baking sheet and spray with olive oil spray.
This is my secret for roasting frozen vegetables.
The olive oil spray is so much easier to evenly distribute and helps the spices stick.
Step 4: sprinkle the corn with salt, pepper, and garlic powder.
Adding the parmesan cheese
Step 5: roast for 10 minutes, then stir.
Sprinkle the top of the corn with grated parmesan cheese.
This gives the corn so much flavor!
Step 6: roast again, stirring once or twice, until golden brown on the edges.
Total bake time will depend on what type of baking sheet you use, as some cook faster than others.
I personally like my corn well roasted, as those chewy browned edges are so flavorful!
For the last 5 – 15 minutes, just keep a close eye on the corn to make sure it does not burn.
In my opinion, the more caramelized crispy edges the better when it comes to corn. I just can’t get enough!
How do you cook frozen corn?
You can roast frozen corn in the oven, or cook it on the stove top.
There is no need to thaw the corn first.
How long should you cook frozen corn?
That will depend on your recipe.
Stove top frozen corn can cook in around 10-15 minutes, while oven roasted corn takes a bit longer.
When roasting corn, I look for those yummy browned chewy edges to tell me that it is done cooking.

Roasted Frozen Corn
Ingredients
- 24 oz frozen corn
- 1 teaspoon garlic powder
- ยผ cup grated parmesan cheese
- salt
- pepper
- olive oil spray
Instructions
- Preheat oven to 425 degrees
- Spray a baking sheet with olive oil spray
- Place frozen corn on the oiled baking sheet
- Spray the top of the corn with olive oil spray
- Sprinkle on even amounts of salt and pepper. If you are unsure of how much to use, start with a teaspoon of salt, and ยฝ teaspoon of pepper. You can always add more to taste after the corn is done roasting.
- Sprinkle the garlic powder on top of the corn evenly
- Roast at 425 degrees for 10 minutes
- Remove corn and stir it around, then sprinkle on the grated parmesan cheese
- Roast 15 more minutes, then stir again
- Roast for an additional 5 – 15 minutes, until corn is golden brown on the edges
