Can I freeze some after I make them
Can you use frozen blueberries?
I just made these muffins, and they are delicious! I almost skipped the streusel topping. So glad I didn’t! I used a Golden Butter cake mix instead of vanilla as that is what I had in the house. I might add lemon juice to make it a bit more lemony.
Can I use frozen blueberries?
I would not, as they will be more watery and may result in a different texture of the muffin.
@Mar,
I always use frozen blueberries when making muffins. They are not too wet, nor do they require any changes to the essential ingredients. Defrost first, pat dry and then fold in just as you would fresh.
Can yellow cake mix be substituted for the white?
Yes!
What can I use instead of olive oil?
Vegetable oil will also work
@Joy Shull,
I used light blue plate mayo because I didnโt have oil nor butter. They turned out great.
How would you substitute cranberries?
@Natty, I chopped Frozen cranberries up in my food chopper and substituted for blueberries. Turned out fine!
I made these blueberry muffins and they were a great hit. I had been buying Little bites muffins and these are bigger and healthier.
Can I use applesauce instead of the oil?
I have not tested it in this recipe specifically. Usually it’s an ok sub, let me know if you try it!
Hi Joy. I tried the recipe and baked the best, moist, delicious giant blueberry muffins that I have ever baked. I have tried to buy muffins like these, but never found them. I will continue to use this recipe. Thanks so much! Constance Jones
