These are the easiest funfetti cookies ever!

These soft and chewy pillsbury funfetti cookies require just 3 easy ingredients and are a guaranteed crowd pleaser. They are easy enough to whip up anytime and use just a couple simply pantry ingredients!

Cake mix recipes are one of my go to hacks for making homemade baked goods in a fraction of the time.

We love all kinds of cake mix cookies and I often make them whenever I need a fast dessert for a party, holiday, or birthday party.

Cookies are always a hit no matter the occasion! These funfetti cookies are one of my kids’ favorite cookie recipes and they call them sprinkle cookies.

Ingredients to make funfetti cookies

  • a box of funfetti cake mix
  • eggs
  • olive oil: or vegetable oil

How to make cake mix funfetti cookies

Step 1: Preheat the oven to 350 degrees. Mix together the cake mix, oil, and eggs in a bowl to form the cookie batter.

A note about the oil: I always use olive oil when baking, but any neutral flavored cooking oil will work for this recipe. Vegetable oil is a common substitute for these kinds of recipes.

Step 2: Drop the funfetti cookie batter by spoonfuls onto a baking sheet. You can use parchment paper if you want for ease of cleanup.

You can add an extra step here if you want and roll the dough in more sprinkles for a little extra color. If you are making them for a holiday you could use holiday themed colors!

Step 3: Bake the funfetti cookies at 350 degrees for 11-13 minutes, until lightly browned on the bottoms.

Step 4: Let the cookies cool a minute on the pan, then transfer to a wire cooling rack to cool completely.

Easy Funfetti Cookies

  • 15 oz box of funfetti cake mix
  • ½ cup olive oil or vegetable oil
  • 2 eggs

Instructions 

  • Preheat the oven to 350 degrees
  • Mix together the cake mix, oil, and eggs in a bowl until the cookie batter is well combined
  • Drop the batter by rounded spoonfuls onto a baking sheet
  • Bake the funfetti cookies for 11-13 minutes, until lightly browned on the bottoms
