These are the perfect salty sweet treat!

Ritz crackers are a classic favorite snack, but have you made a ritz cracker dessert yet?

The lightly salty light and buttery flavor of ritz makes for the most delicious sweet treats. Ritz Cracker Toffee and these ritz cracker cookies need to be on your holiday baking list for sure!

These ritz cookies are my ultimate favorite combination.

Three ritz crackers are sandwiches with creamy peanut butter, dipped in melted chocolate and topped with flaky sea salt.

Every bite is chocolate peanut buttery goodness with the perfect salty sweet ratio.

Ingredients to make ritz cookies

  • Ritz crackers
  • Creamy no stir peanut butter
  • Dark chocolate chips
  • Semi sweet chocolate chips
  • Flaked sea salt or holiday sprinkles

How to make ritz cracker cookies

Step 1: Line a cookie sheet with wax paper. Place the rows of ritz crackers flat side facing up. Top each cracker with a layer of creamy peanut butter, then place another ritz cracker flat side facing up on top.

Add another layer of peanut butter and finish with a third ritz cracker with the top showing the rounded side.

Recipe Tip

Each cookie should have ritz flat side up, peanut butter, another ritz flat side up, peanut butter, then ritz rounded side up. Both ends will have the rounded side facing outwards. 

Step 2: Melt the dark chocolate chips and semi sweet chocolate chips in the microwave until smooth.

Be careful not to burn the chocolate chips. Stir every 30 seconds, or as necessary, until melted and smooth.

I liked the blend of rich dark chocolate and sweeter semi sweet chocolate, but you could do any kind of chocolate you want. White chocolate would be fun too, especially for the holidays!

Step 3: Use a fork to dip each ritz cookie into the melted chocolate, shake off the excess, then place it back onto the baking sheet.

Step 4: Sprinkle the tops immediately with flaked sea salt or sprinkles immediately before the chocolate hardens.

Place the ritz cookies in the fridge to chill for 1 – 2 hours, or until the chocolate is hardened.

How To Store

Once the chocolate has hardened, you can keep these in an airtight container or ziploc bag in the fridge or freezer.

This no bake dessert is one of my top favorites. If you grew up loving ritz crackers, you will love these!

Ritz cookies are great for Christmas and the holidays, or any time of year when you want something quick for your sweet tooth.

I would like a bag of these in my freezer at all times, please!

Ritz Cracker Cookies

These chocolate ritz cracker cookies make the perfect no bake salty sweet dessert for the holidays!

Ingredients 

  • 84 ritz crackers
  • 1 cup creamy no stir peanut butter
  • 1 ¼ cups dark chocolate chips
  • 2 cups semi sweet chocolate chips
  • Flaked sea salt or sprinkles, for topping

Instructions 

  • Line a baking sheets with wax paper
  • Place 28 ritz crackers flat side facing up
  • Top each cracker with a layer of creamy peanut butter, then place another ritz cracker flat side facing up on top. Add another layer of peanut butter and finish with a third ritz cracker with the top showing the rounded side.
  • Each cookie should have ritz flat side up, peanut butter, another ritz flat side up, peanut butter, then ritz rounded side up. Both ends will have the rounded “pretty” side facing outwards. 
  • Melt the dark chocolate chips and semi sweet chocolate chips in the microwave until smooth. Be careful not to burn the chocolate chips. Stir every 30 seconds, or as necessary, until melted and smooth
  • Use a fork to dip each cookie into the melted chocolate, shake off the excess chocolate, then place it back onto the baking sheet
  • Sprinkle the tops with flaked sea salt or sprinkles immediately before the chocolate hardens
  • Place the ritz cookies in the fridge to chill for 1 – 2 hours, or until the chocolate is hardened 
  • Store in an airtight container in the fridge or freezer
